Super Bowl Wings

So this past weekend we had a Super Bowl party. Good friends, good food, and a good game (I guess?).
I decided to make my world famous, award winning wings! They haven't won any awards and are not world famous YET!... Props to Fran for the pics!




Sesame Encrusted Chicken Wings w/ Sweet Chile Buffalo Sauce and Basil Bleu Cheese

Ingredients;

1 small jar of black sesame seeds
3/4 cup AP flour
1 tbsp smoked paprika
1 tbsp chile powder
S/P
5 lbs chicken wings
1 gallon peanut oil

3/4 cup any Thai sweet chile sauce
1/2 cup hot sauce (such as Crystal)
3 oz melted butter
3 tbsp rice wine vinegar

1 bottle chunky bleu cheese dressing
1 cup fresh basil

Preparation;

First, pour oil in a nice deep stock pot. Using a candy thermometer bring the temp to 325.
Mix together the first 5 ingredient well then dredge the wings in mixture.
Combine chile sauce, hot sauce, butter and vinegar in sauce pan and simmer.
Quickly blanch the basil in boiling water for 30 seconds then shock in ice bath.
This will bring out a lot of flavor and color from the basil.
Dry basil off and place in food processor with bleu cheese dressing. Pulse until basil is incorporated.
Once oil is up to 325 degrees par-cook the wings for about 3 minutes then remove and let cool for 10.
Bring oil temp up to 350 then drop the wings back in for about 7 to 10 minutes depending on the size of them. This second dip will make them nice and crispy.
Next, put wings on a paper towel or brown paper bag covered sheet pan to let some of the oil drain off.
Season with S/P then dump them in a big mixing bowl with the sauce.
Toss and serve with the Bleu cheese/basil sauce.
